Assistant Chef - Cheese and Cold Cuts (Charcuterie)Section
The Assistant Chef - Cheese and Cold Cuts (Charcuterie)Section is responsible for managing and maintaining the cheese and charcuterie fridge in Dry & Raw boutique and for preparing sandwiches and salads according to the shop’s menu and standards.
1. Quality Control:
• Inspect all cheese and charcuterie products upon delivery for quality, freshness, and compliance with food safety standards.
• Monitor and maintain optimal storage conditions, including temperature and humidity levels.
• Conduct regular checks to ensure that all products are properly stored and labeled.
2. Food Preparation:
• Mise en place, prepare the setup required before serving, prepare the ingredients (clean, chop, mince), arrange the ingredients, prepare the workstation.
• Prepare sandwiches and salads according to customer orders and specifications, thus follow the recipes and portion control guidelines to ensure consistency in taste and presentation.
• Prepare cheese and charcuterie platters, ensure proper portioning and presentation.
• Slice, plate, and arrange cheese and charcuterie products in an appealing and artistic manner.
• Collaborate with the head chef to develop new and innovative cheese and charcuterie offerings.
3. Inventory Management:
• Maintain an accurate inventory of all cheese and charcuterie products.
• Monitor stock levels and place orders to replenish supplies as needed.
• Ensure proper rotation of products to minimize waste and maintain freshness.
4. Sanitation and Safety:
• Adhere to all food safety and sanitation guidelines, including proper handling and storage of cheese and charcuterie products.
• Ensure that all equipment and utensils used in the cheese and charcuterie fridge are cleaned and sanitized regularly.
• Monitor and maintain cleanliness and organization of the cheese and charcuterie fridge area.
5. Team Collaboration:
• Collaborate effectively with other staff to ensure smooth operations and timely service.
• Communicate any issues or concerns regarding cheese and charcuterie products to the Operations Manager.
• Previous experience in a professional kitchen, preferably in cheese and charcuterie.
• Familiarity with food safety and sanitation regulations.
• Excellent attention to detail and organizational skills.
• Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
• Strong communication and teamwork skills.
